Custom setting - Fields displayed by default on link "All categories"

SITUATION :
On tickets grid, Column "Categories" on the left have a link "All categories".
Click on this link display all tickets with all custom fields.

PROBLEM :
With a lot of custom fields, the ticket grid is not exploitable anymore due to the quantity of columns displayed.

IDEA :
1. Develop a function which allow the Admin to set the list of "custom fields displayed by default on link All categories"
2. Develop a function which allow each user to set the list of "custom fields displayed by default on link All categories"

If admin change it, the setting for users will be updated by including the difference activated by the Admin. (example, new custom field integrated) and user can remove only this by unchecking only the checkboxes linked to the new fields added.
